Water and Cake
いまは機械ちゅうもんがあるやろ。そやからどこでもできるんねんけど、むかしはけものみちと、あと必ず水が出るとこ。湧き水がでるとこ。それがなかったら旅できへんわ。清水でも、音羽の水言うてええ水がでるからな。それが一番よくわかるのは、山城(やまじろ)。城のあるとこはかならず水があんねん。あんな高い山の上でも。どうしてその水を探しているのか。えらい思うねん昔の人は。そんだけの人間養のうていかないかんねんから。ふつうの食料は蓄えられるけど、水は貯えたら腐っていきよるねんあれ。必ず水があるわ。井戸をつくるか湧き水をみつけるか。水と、それとお菓子屋。湧き水があったらかならず茶店がある。京都の場合はな。みんな関連しとんのや。
道だけとちごてそこに必ず茶店があるねん。道だけではどうにもならん。今では観光用の土産物屋がばーっとなっておるけど、本来は茶店があったんや。まんじゅう屋とかな。それといわゆる薬草が生えとんねん。自然のな。むかしは風邪か腹痛や。腹痛やったら苦いもん飲んだらなおるねん。風邪の場合は発酵性のものを飲むんや。
There are machines in these contemporary days. Therefore, though travel can be done from wherever you want, in the olden days travel couldn’t be made but for the existence of animal trails and water springs. Of crystal streams, there is otowano mizu, which has really good quality. What typically shows this the most is a mountain castle. Where there is a castle, there must also be water. Even at that high mountain peak, how do they look for water? I think people in the olden times were really great. They had to nurture that many human beings. While ordinary food can be preserved, water is liable to go bad if preserved. Water certainly exists. To construct a well or to find a spring, that’s the point. Everything is correlated.
There is a teahouse as well as a road. You cannot do anything with only a road. Currently, souvenir shops gather together, however, there was originally a teahouse. A steamed Japanese type of bread, for example. In addition, there grew herbs, so to speak. It was natural, of course. Speaking of illnesses, it used to be cold or stomach ache. In the case of stomach ache, a bitter drink would work well. When suffering from a cold, they would drink a fermented drug.

Succeeded to his predecessor’s name of “Touemon” given from many generations before to become the current 16th head of the line. He has grown cherry trees in Maruyama park in Kyoto, Keage Incline, Rostock in Germany and so forth.
